Mum’s cooking – what could be better, right? Call us biased, but it’s pretty hard to beat that. Michelin-starred chefs may get all the glory, although sometimes, it’s just nice to eat a home-cooked meal. Trouble is, finding one can be difficult. Blame the machine-like process of preparing food; truth is, that sense of personal touch is gone when you eat outside.
Not at Folklore.
The recently opened restaurant, helmed by local chef extraordinaire Damian D’Silva and located at Destination Singapore Beach Road hotel next to Golden Mile Complex, aims to put the spotlight on what D’Silva terms as “Singapore Heritage Food”.
That means you’ve got flavours inspired by Eurasian dishes (D’Silva is Eurasian after all), Peranakan dishes (his grandmother is Peranakan), Chinese dishes, Malay dishes, and Indian dishes. In other words, Folklore’s menu is literally a melting pot of cultures. And that has led to some very delicious food.
For instance, when we paid a trip to the restaurant a few weeks back, some of the dishes we tried were some of D’Silva’s old creations – stuff from his previous ventures at Soul Kitchen and Immigrants, while others were completely new takes on local dishes – all were food that he ate while growing up.
Here are some of the dishes we tried:
All in all, we’ve got to commend D’Silva’s impressive take on his homespun dishes. What may not have necessarily been sold at a coffee shop, was thrust forward in the spotlight here, avoiding the ignominy of being forgotten, while giving the unfamiliar a different perspective of Singapore’s heritage.
Nothing here is mainstream per se, but almost everything is certainly delicious, and we hope that unlike D’Silva’s other restaurants that have closed down, Folklore is here to stay.
Folklore is located at 700 Beach Road, Singapore 199598. Opening Hours: Open Daily – 12pm to 2.30pm, 6pm to 9.30pm. Tel: 6679 2900
